According to FSIS, small items can be thawed overnight; most foods require a day or two; while large items like turkeys can take longer, about a day for every 5 pounds of weight. If you don’t have time to defrost, you have the option of cooking them frozen.

Faster and safer defrosting

In addition to the refrigerator, there are two other ways to defrost food safely and that may take less time: in cold water or in the microwave.

Defrosting in cold water: Place food in a leak-proof plastic bag and submerge in cold water. Make sure the water stays cold, and renew every
minutes. After thawing, cook food immediately.

When thawing food in a microwave, cook food immediately after thawing because areas of the product may become hot and begin to cook.

Food safety experts do not recommend storing partially cooked food because the bacteria would not have been destroyed. Food may have reached optimal temperatures for bacteria to grow.
